Seafood Gravy

- 1 stick butter shopping list
- 2 onions, chopped shopping list
- 1 bunch green onions, chopped shopping list
- 1/2 cup minced celery shopping list
- garlic to taste shopping list
- 1 pound medium shrimp, peeled (or crawfish or lump crabmeat) shopping list
- 1/2cup flour shopping list
- 1 quart whole milk shopping list
- 1 pint heavy cream shopping list
- 1 tablespoon worcestershire sauce shopping list
- 1/3 cup clam juice shopping list
- !/2 bunch parsley, minced shopping list
- salt and white pepper shopping list
- 1/2 teaspoon cayenne shopping list
- 1 or 2 bay leaves shopping list
- Chopped mushrooms shopping list
How to make it
- In a saucepan melt butter and add onions, green onions, celery and garlic. Add shrimp and cook until shrimp turn pink. With cooked seafood, crawfish,or crab add at the last 5 minutes. Add flour and stir in completely. Add about half the whole milk and half the cream. Let simmer for about 10 to 15 minutes, stirring often. Add more milk and cream to desired thickness. Add Worcestershire, clam juice, parsley, salt and white pepper to taste, cayenne if using, bay leaves, and chopped mushrooms. Let seasonings marry, over low heat, about 5 minutes. Stir well
