Penne Pasta Salad - Diabetic Friendly

- Ingredients: shopping list
- 6 cups cooked Penne pasta; as the package directs. shopping list
- 2 cups shredded cooked skinless chicken breast shopping list
- 1 cup chopped red onion shopping list
- ¼ cup each chopped red or green bell pepper and sliced zucchini shopping list
- 1 ( 4oz) can medium sliced black olives, drained shopping list
- 1 tsp. Crushed red pepper shopping list
- 1 tsp. salt shopping list
- 1 can HEALTHY CHOICE recipe creations Cream of roasted chicken w/ herbs condensed soup shopping list
- ½ cup each lemon juice and fat-free shredded parmesan cheese shopping list
- ½ cup shredded fresh basil shopping list
How to make it
- Method:
- In a large bowl, combine pasta, chicken, onion, bell pepper, zucchini, olives, red pepper and salt; toss lightly. In small bowl, combine soup and lemon juice; mix well. Pour soup mixture over pasta salad; mix well. Sprinkle with Parmesan cheese and basil, if desired. Makes 8 servings.
- Nutritional Values: Calories per serving: 258, Fat: 6g, Sodium: 380mg. If served with Wine, Vegetables and Bread add another 300 calories per serving.
