- About 4 or 5 large potatoes shopping list
- carrots - approx 1kg (or 6-8 depending on size) shopping list
- 1 large or 2 small onion(s) shopping list
- 1 large Can of corned beef. shopping list
How to make it
- Slice the potatoes, carrots and onion. This is way easier and a lot faster if you have one on those V-Slicer thingies.
- Roughly slice the corned beef so it will be easier to break up later.
- Layer the ingredients, in a casserole-type pan, starting with a layer of potato. When it comes to the Corned Beef layer, crumble it up to spread it out. I prefer the order to be potato, carrot, onion, corned beef...but that's just me...
- Repeat, so you have two full layers of each ingredient, and finish with a layer of potato.
- Pour water into the pan up to about one third the way up the layers.
- Top with ground black pepper, put the lid on and place on the stove over medium heat.
- Once the water is bubbling, turn down and simmer for approx 40-45mins, until potatoes are tender. Check with a skewer or knife from time to time as the cooking time varies quite a bit depending on the thickness of your slices and the size of your pan.
- Serve with fresh crusty bread and butter.
- Note: Although this dish isn't really seasoned or spiced, it is incredibly tasty......good old English comfort food. Please try it !
