OLD-FASHIONED CARROT CAKE

- Ingredients: shopping list
- 1 ( 9oz ) pkg. Frozen sliced carrots shopping list
- 2 cups sugar shopping list
- 1 ½ cups vegetable oil shopping list
- 4 eggs, beaten shopping list
- 2 ½ cups all-purpose flour shopping list
- 2 tsp. baking soda shopping list
- 2 tsp. cinnamon shopping list
- 1 tsp. salt shopping list
- ¾ cup chopped pecans or walnuts, divided shopping list
- Frosting: shopping list
- ½ cup margarine or butter, softened shopping list
- 8oz cream cheese, softened shopping list
- 1 tsp. vanilla extract shopping list
- 3 ½ cups confectioners' sugar shopping list
How to make it
- 1)Preheat oven to 350º. Grease and flour a 9 x 13-inch baking pan. Cook carrots according to package directions until tender. Drain and mash in a large bowl. Add sugar, oil and eggs; beat well.
- 2)Mix flour, baking soda, cinnamon and salt. Beat into carrot mixture. Stir in ½ cup pecans. Pour batter into pan. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- 3)Cool cake in pan on a wire rack. To prepare frosting, beat margarine, cream cheese and vanilla extract in a bowl until creamy. Add enough confectioners' sugar to make frosting a “spreadable” consistency.
- 4)Spread frosting evenly over cake. Sprinkle top with remaining pecans. Cut into squares.

Ok now, this is one that I just love...I've never seen carrot cake made with the frozen carrots, but adore the idea...thanks so much for a great post! ^5
