Minestrone

- 1 oz. butter shopping list
- 1 tablespoon olive oil shopping list
- 2 oz. smoked streaky bacon, finely chopped shopping list
- 1 medium onion, finely chopped shopping list
- 2 stalks celery, finely chopped shopping list
- 6 oz. carrots, finely chopped shopping list
- 2 tomatoes, finely chopped shopping list
- 1 clove garlic, crushed shopping list
- salt and pepper shopping list
- 1.5 litres ham stock (roughly 2.75 pints/ 55 fl. oz.) shopping list
- 1.5 tablespoons basil leaves, torn up shopping list
- 8 oz. leeks, finely chopped shopping list
- 6 oz. green cabbage, finely chopped shopping list
- 2 tablespoons tomato puree shopping list
- 3 oz. short cut macaroni (or other tiny pasta) shopping list
- 2 tablespoons curly parsley, chopped shopping list
- Grated Parmesan shopping list
How to make it
- In a large saucepan, heat up the butter and the oil together.
- Add the bacon and cook for 2 minutes.
- Add the onion, celery, carrots, tomatoes, garlic and seasoning.
- Cover and cook gently for 20 minutes.
- Pour in the ham stock.
- Add the basil.
- Simmer, covered, for 1 hour.
- Add the leeks and the cabbage.
- Cook for a further 30 minutes.
- Stir in the tomato puree and the macaroni.
- Cook a further 10 minutes.
- Before serving, stir in the parsley.
- Sprinkle with Parmesan cheese, if liked.
