Couscous With Cumin and Lime

- 1 cup uncooked couscous shopping list
- 1/4 cup raisins shopping list
- 1/4 cup walnuts, chopped shopping list
- 1 1/4 cups chicken broth shopping list
- 3 tablespoons extra virgin olive oil shopping list
- 2 tablespoons fresh lime juice shopping list
- 1 teaspoon red wine vinegar shopping list
- 1/2 teaspoon ground cumin shopping list
- 8 green onions, chopped shopping list
- 1 (red) bell pepper, seeded and chopped shopping list
- 1/4 cup fresh cilantro or mint, finely chopped shopping list
- salt & pepper shopping list
How to make it
- Bring chicken broth to a boil in a large sauce pan and stir in the couscous and raisins.
- Cover the pot, remove from heat, and let stand for 5 minutes.
- In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin.
- Add green onions, red pepper, cilantro, and walnuts, and toss to coat.
- Fluff the couscous well, breaking up any chunks, then add to the bowl with the vegetables and mix well.
- Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.
