I love cornbread and I love chocolate...so I combined the two and made this absolutely perfect chocolate dessert! I used my favorite cornbread recipe from this site (Sweet Cornbread...posted by Pointsevenout) and I tweaked it a bit! Read more It worked GREAT! See less

- 2/3 cup cocoa powder
- 2/3 cup flour
- 2/3 cup fine cornmeal
- 2/3 cup sugar
- 1 tsp. salt
- 1 Tbls. baking powder
- 1 large egg
- 1/3 cup corn oil
- 1 cup milk

Ingredients

How to make it

Mix all dry ingredients together.
Mix all wet ingredients together.
Combine both til mixed well.
Pour into a greased 8x8 inch baking dish.
Bake at 400 degrees for about 25-35 minutes or til center of bread springs back when light pressed.

Me and my two youngest boys loved this chocolate cornbread (BRAVO, lilliancooks!). However, my wife only reluctantly tried a single bite. My oldest son would not go near it. And worst of all, my daughter (5) reminded us all in no uncertain terms that she doesn't like chocolate (GASP!) -- I've obviously failed as a parent. Not sure how many stars that equals, and not even sure my 5-star rating would count given my daughter's condition. Sigh.

Can't tell this has cornmeal. Cocoa covers it well. It tastes like chocolate cake, except not quite as moist. I like the result. But anybody wanting more of a cornbread flavor will have to back off on the cocoa a little and add a little more cornmeal.

I was right in prestidigitating that mother wouldn't like the cornbread. She smelled it then picked up a couple of very little crumbs for a taste test and hasn't touched it since. It's not your recipe Lillian, mother is just being stubborn because she likes chocolate cake without icing.

Made this in the wee hours of the morning. It smells like chocolate cake. Cooling now. Going back to sleep. Wonder if it is going to be torn up in the morning when I wake.
