Juicy Roasted Chicken

- 3 pound whole chicken, giblets removed shopping list
- salt and black pepper to taste shopping list
- 1 tablespoon onion powder OR to taste shopping list
- 1/2 margarine, divided (I'd use butter) shopping list
- 1 stalk celery, leaves removed shopping list
How to make it
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken in a roasting pan.
- Season generously, inside and out with salt, pepper and onion powder.
- Place 3 tablespoons margarine in chicken cavity.
- Arrange pats of remaining margarine on chicken's exterior.
- Cut celery into 3 or 4 pieces and place in chicken cavity.
- Bake, uncovered, for 1 hour and 15 minutes OR to 180 degrees.
- Remove from heat.
- Baste with melted margarine and drippings.
- Cover with aluminum foil and allow to rest for 30 minutes.
- Carve and serve.
