Swedish Pineapple Cake

- 2 cups sugar shopping list
- 4 Tbsp. butter (room Temperature) shopping list
- 2 eggs shopping list
- 1 (20 oz) can crushed pineapple shopping list
- 1 tsp. soda shopping list
- 1 tsp. pure vanilla shopping list
- 1/2 cup chopped pecans shopping list
- 2 cups unsifted flour shopping list
- -------------------Frosting------------------ shopping list
- 1 (8 oz ) package cream cheese (softened shopping list
- 8 Tbsp. butter (room temperature) shopping list
- 1 tsp. pure vanilla shopping list
- 2 1/2 cups powdered sugar shopping list
- 2/3 cup chopped pecans. shopping list
How to make it
- Preheat oven to 350 degrees
- In a mixer bowl beat the sugar and butter until fluffy.
- Add the 2 eggs one at a time.
- Add the pineapple and all the juice.
- Add the flour and the soda. and mix well.
- Add the 1/2 cup chopped nuts.
- Pour into a greased and lightly floured 9x13 glass baking dish.
- Bake for 45-55 minutes (Toothpick test for doneness).
- Mix all ingredients for the frosting together.
- Make sure the cake is completely cool before frosting it.
- Enjoy!
