Finnish Pancake

- 1/3 cup butter shopping list
- 5 eggs shopping list
- 1 tablespoon sugar shopping list
- 2 cups milk shopping list
- 1 cup flour shopping list
- 1 cup small curd cottage cheese shopping list
- 1 teaspoon baking powder shopping list
- Fresh berries/peaches & Confectioner's sugar (optional) shopping list
How to make it
- Preheat oven 425 degrees, cut butter into small pieces & place in 10" cast iron skillet. Heat in oven until butter is melted.
- Combine eggs, & sugar in electric mixer and mix at high speed for 1 minute. Continue to mix while slowly adding milk, then flour, then cottage cheese, then baking powder. Pour blended mixture into hot skillet and bake for 35 minutes until pancake is puffed and beginning to brown.
- Remove from oven & let sit 5-8 minutes before cutting. (pancake will fall)
- Sprinkle with confectioner's sugar and serve with fresh berries or peaches and warm maple syrup.
