Dublin Coddle Irish Stew

- 1 pound stewing beef, bite size pieces shopping list
- 8 slices bacon, chopped to 1" pieces shopping list
- 1 pound breakfast sausage, bite size pieces shopping list
- 8 to 10 white potatoes, quartered shopping list
- 3 to 4 celery ribs, chopped shopping list
- 1 large onion, roughly chopped shopping list
- 2 to 3 parsnips, sliced shopping list
- 6 to 8 carrots, sliced shopping list
- 2 liters chicken stock shopping list
- 1/2 cup pearl barley shopping list
- 1 dash worcestershire sauce shopping list
- 2 teaspoons sugar shopping list
- 2 to 3 garlic cloves, minced shopping list
- salt and pepper to taste shopping list
- Dash extra virgin olive oil shopping list
- 1 teaspoon basil, chopped shopping list
- 1 teaspoon cilantro, chopped shopping list
- 1 teaspoon parsley, chopped shopping list
How to make it
- Put oil into a small skillet to heat.
- Add onions and saute until tender.
- Add garlic and saute 30 seconds more.
- Sear the stew beef in the skillet, browning well.
- Add the Worcestershire sauce.
- Pour 1 liter of stock into your crock pot OR stew pot.
- Add prepared vegetables.
- Add sausage and bacon.
- Add barley, herbs and sugar and mix well.
- Add beef mixture to pot.
- Salt and pepper to taste.
- Cover the contents of the crock/pot with more chicken stock.
- Cook 3 to 5 hours at low heat on the stove top/5 to 7 in a low crock pot.
- Close to serving time check the consistency.
- Thicken with cornstarch and water, is desired.
