Five Pounds of Possum Stew

- 5 pounds possum, removed from your high beams, skinned and dressed OR pork roast shopping list
- 1 large onion, sliced shopping list
- 1 fennel bulb, sliced shopping list
- 2 garlic cloves, quartered and stuffed into possum shopping list
- 5 pounds fingerling potatoes shopping list
- 4 carrots, chunked shopping list
- 4 celery ribs, chunked shopping list
- salt and pepper to taste shopping list
- 1 bouquet garni shopping list
- 1 1/4 ounces onion soup mix shopping list
- 3 cups water shopping list
How to make it
- Place all ingredients into a crockpot.
- Set crockpot on high heat.
- Cook for 5 hours on high heat and then 5 additional hours on low heat.
- Serve with biscuits or cornbread.

Sounds good but I think I'll go with the pork roast. Even in the South it's getting mighty hard to find fresh road kill. Thanks.

There is Road Kill cafe in South Carolina in Swansea, the motto is,"From the black top to the table top." But this is a really cute, but good recipe thanks....:)

It all depends whether your possum is a city dweller or country. Country ones are good! This is good eatins!
