Chicken Brandado

- 2 boneless skinless chicken breast halves shopping list
- 1 clove garlic minced shopping list
- 2 tablespoons butter shopping list
- 1/2 cup dry white wine shopping list
- 1/4 cup brandy shopping list
- 1/2 cup whipping cream shopping list
- 1 egg yolk slightly beaten shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon ground nutmeg shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
How to make it
- Cook chicken and garlic in butter in medium skillet 15 minutes turning once.
- Add wine and brandy but do not stir.
- With a long match ignite brandy mixture then shake pan until flame goes out.
- Cover then reduce heat and simmer 15 minutes then remove chicken to platter and set aside.
- Combine remaining ingredients stirring well then add to pan juices.
- Cook over medium heat stirring constantly until thickened and bubbly.
- Pour sauce over chicken then serve immediately.
