Feeling Your Oats Salmon Loaf

- 2 - 15 1/2 ounce pink salmon, canned shopping list
- 1 cup oats, uncooked shopping list
- 1/4 cup Greek Yogurt shopping list
- 2 eggs shopping list
- 2 tbsp. lemon juice shopping list
- 1/4 cup minced onion shopping list
- 1/4 cup minced celery shopping list
- 1/4 cup grated carrot shopping list
- 2 tbsp. fresh parsley, chopped shopping list
- 1/4 tsp. salt shopping list
- 1/8 tsp. pepper shopping list
- 1/2 tsp Hungarian paprika shopping list
How to make it
- Preheat oven to 350
- Drain the canned salmon reserving the liquid in a bowl. Save about half of the liquid to saute the onion, celery and carrots and the rest to satisfy the cats squirming at your feet.
- Some folks like to make the dark skin and bones disappear. I'm not one of those folks. It all gets mushed together.
- Put the salmon, lemon juice, sauteed veggies, parsley, eggs, yogart, salt, oats and pepper into a big bowl and mix it all together well.
- Press into lightly greased loaf pan and shake it good to settle it into the pan. Because I'm cooking for two, I use two mini-loaf pans so I have one for now and one for later.
- Bake @ 350 for 40-45 minutes till knife inserted comes out clean.

Love your version of salmon loaf,we always used bread crumbs instead of oats. Family likes a creamy oniony sauce for topping the loaf and I always make buttered new potatoes and peas. Just something my mom used to do all the time. Good stuff, fun ...more
