Japanese Fruit Cake

- 1 cup butter shopping list
- 2 cups sugar shopping list
- 6 large egg yolks shopping list
- 3 cups all-purpose flour shopping list
- 4 teaspoons baking powder shopping list
- 2 teaspoons cinnamon shopping list
- 1 teaspoon nutmeg shopping list
- 1 teaspoons ground cloves shopping list
- 1 cup milk shopping list
- 2 cups raisins shopping list
- 2 cups flaked coconut shopping list
- 1 cup pecans, chopped shopping list
- 6 large egg whites shopping list
- 2 cups sugar shopping list
- 1/4 cup all-purpose flour shopping list
- 1 1/2 cups water shopping list
- 2 lemons, peeled and seeded shopping list
- 2 oranges, peeled and seeded shopping list
- 2 cups flaked coconut shopping list
How to make it
- Preheat oven to 350 degrees F. (175 degrees C)
- Grease and flour four 9" rounds cake pans.
- CAKES:
- Toss together raisins, coconut and pecans in 1 cup of the flour to coat.
- Set aside.
- Cream butter and 2 cups sugar until light and fluffy.
- Beat in yolks one at a time.
- Sift together remaining 2 cups flour, baking powder, cinnamon, nutmeg and cloves.
- Add to creamed mixture, alternating with milk.
- Mix until blended.
- Fold in raisin/pecan/coconut mixture.
- In a clean bowl, whip egg whites until stiff peaks form.
- Fold into batter until no streaks remain.
- Divide batter among four pans.
- Bake for 25 to 30 minutes OR until cakes test done with toothpick.
- Cool in pans 10 minutes.
- Turn our onto wire racks to finish cooling.
- FILLING:
- Mix 2 cups sugar and 1/4 cup flour in saucepan.
- Add water and stir until dissolved.
- Chop lemons and oranges into small pieces and add to saucepan.
- Bring to a boil.
- Cook until thick, about 10 minutes.
- Add coconut and stir.
- Allow to cool.
- Assemble cake with filling between layers and ending with filling on top.

This sounds so interesting and unique, I must make it! Love the use of lemons/oranges here, the dough sounds very nice too! An easy 5 forks from me!

Sounds Great Lorraine. I Like The Fresh Ingredients In This. I Think That I'm One Of Only Thirty Five People In the World Who Actually Likes the Traditional Fruit Cake. But, This One Is A Real Winner. Gonna Make Real Soon.
