White Fruitcake

- 2 1/2 cups cake flour shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 2 1/2 cups golden raisins shopping list
- 1 cup quartered dried apricots shopping list
- 1 cup crystallized ginger shopping list
- 1 cup crushed pineapple, drained shopping list
- 1 cup blanched almonds, toasted and coarsely chopped shopping list
- 1 cup walnuts, toasted and coarsely chopped shopping list
- 1 cup butter, room temperature shopping list
- 1 cup sugar shopping list
- 5 large eggs shopping list
- 2 teaspoons lemon zest, freshly grated shopping list
- 2 teaspoons orange zest, freshly grated shopping list
- 1 tablespoon vanilla extract shopping list
- 1 teaspoon almond extract shopping list
- 1 teaspoon orange extract shopping list
How to make it
- Preheat oven to 270 degrees F.
- Line three 4 1/2x8 1/2 loaf pans with parchment; generously butter paper.
- Sift flour, baking powder and salt into a large bowl.
- Stir with fork to blend.
- Add apricots, ginger, raisins, pineapple, almonds and walnuts.
- Toss gently to coat.
- Cream butter and sugar in another bowl until light and fluffy.
- Beating by hand, gradually add fruit mixture alternately with eggs, one at a time, beating vigorously after each egg addition.
- Blend in zests, vanilla and extracts.
- Divide batter evenly among pans.
- Bake until tester comes out clean, about 2 hours.
- Cool 30 minutes.
- Turn out of pans.
- Peel off paper and cool completely.
