Spinach Salad with Orange Cream Dressing

Great easy recipe I had once long ago and just used again the other day. Hope you enjoy as much as I do!
Ingredients
- 1 large bag fresh spinach shopping list
- 2 cups roasted pine nuts (or sub walnut, pecan, etc) shopping list
- 10-12 strips pepper bacon shopping list
- 1 1/2 cups mayo or veganaise shopping list
- 1/3 container frozen concentrated orange juice shopping list
How to make it
- Fry bacon until crisp then set aside til cool.
- Place fresh spinach, pine nuts, and crumbled bacon together in large bowl.
- In a separate bowl place mayo and frozen orange juice concentrate together until well mixed.
- Serve dressing over salad when ready to eat and not before or the citric acid will wilt the spinach.
- May be good with fresh crumbled blue or gorgonzola cheese too.
