Greek -flaming- Cheese - Saganaki

- 1- pound soft kasseri or kefalotiri cheese shopping list
- 3- tablepoon melted butter shopping list
- juice of 1/2 - lemon shopping list
- thin slices of crusty bread ......or toasted bread shopping list
- 2- tablespoons brandy shopping list
How to make it
- Cut cheese into 3 wedges or slices 1/4 inch thick
- place on a broiler pan
- brush with melted butter
- broil 4-6 inches from heat until cheese is bubbly and light brown
- remove from heat
- pour brandy over the cheese and ignite immediatley
- sprinkle with lemon juice and serve with bread
- serves 8......

I remember when my brother turned me on to a Greek restaurant in Atlanta. The waiters would come out and say "OPA" and have a tray of flaming cheese. We would also have a bottle of a blush wine called "Sta Rosa"....what memories! Thanks tink!!
