Russian Potato Soup

- 1 tablespoon butter shopping list
- 2 medium onions, chopped shopping list
- 2 celery stalks, chopped shopping list
- 1 pound potatoes (peeled or unpeeled) in 1/2" cubes shopping list
- 2 carrots, grated shopping list
- 2 garlic cloves, minced shopping list
- water to cover shopping list
- Bay leaf shopping list
- 1/4 teaspoon basil shopping list
- 1/3 cup crisply fried and crumbled bacon (sometimes I go 1/2 cup!) shopping list
- 3 cups chicken stock shopping list
How to make it
- Melt the butter in a Dutch oven.
- Saute the onion, celery, potatoesand carrots for 15 minutes.
- Add garlic and saute for 30 seconds.
- Add enough water to cover the ingredients.
- Add bay leaf and basil.
- Cover and simmer for 25 minutes.
- Mash the vegetables with a fork or potato masher.
- Add stock and bacon to the pot.
- Heat through.
- **Can increase thickness with instant mashed potato flakes.

Does sound like it would be delicious, although in Russia we never made this. Russians do eat a lot of potatoes, just because it is the cheapest vegetable they can buy and often grow in their garden. I'll e-mail this to my mom, she should enjoy it!
