Butternut And Sweet Potato Cabbage Parcels

- 4 large cabbage leaves shopping list
- 1 butternut shopping list
- 3 sweet potatoes shopping list
- 30ml (2T) butter shopping list
- 10ml (2t) fresh thyme leaves shopping list
- 45ml (3T) Cream shopping list
- 50g breadcrumbs (2oz) shopping list
- Grated Parmesan to Taste shopping list
How to make it
- Blanche the 4 cabbage leaves and set aside in some cold water.
- Peel and cut the butternut and three sweet potatoes in chunks.
- Boil these until soft.
- Mash with the 30ml butter, cream and thyme.
- Season well with salt and pepper.
- Scoop a dollop onto each cabbage leaf and wrap it like a gift.
- Place parcels, folded side down, on a baking tray.
- Dot with butter.
- Sprinkle with the breadcrumbs and some grated parmesan cheese.
- Grill for 5 minutes and serve.
