How to make it

  • Fry potatoes in 375degree oil for 5-7 minutes, until golden brown.(or, bake in 450 oven for about 35-40 minutes, until cooked though)
  • Meanwhile, in large bowl, combine vinegar and spices and slowly whisk in oil to combine.
  • Drain fried potatoes on brown paper or paper towels then add to bowl
  • Toss to combine.
  • Arrange on serving plates or on platter, and top with feta cheese and sliced olives.
  • ~you can place fries in 250 oven for a few minutes to rewarm, if needed, before adding the cheese and olives---these don't need to be served steaming hot, but you will prolly need a fork! :)

    I didn't use fresh potatoes, but rather used a frozen bag, and I think there's a difference in how the frozen fries absorb the balsamic/oil mix. Not sure…either that or I messed up on the measurements somewhere. Either way, it's a great recipe! Thanks Keni

    So glad to add to your picture collection!! DELICIOUS! Never would have thought fries tossed in a sauce would have been good! I did mine in the oven for about 35 mins....perfect. Mine actually stayed crisp after the toss too! Easy Greek Tzatziki went so well with these. A match made in heaven...lol!     So these are the famous fries you mentioned in 5thsisters Tzatziki sauce and I can see why they would be a perfect compliment especially with the olives herbs and garlic.

  • 3 medium russet potatoes, sliced into fries
  • 4oz Feta cheese, crumbledd
  • 1/4 cup kalamata olives, sliced
  • 2-3T balsamic vinegar
  • 1t lemon grass, chopped*
  • 1/2t dried oregano
  • 1t parsley flakes
  • 1t paprika
  • 1/2t sea or kosher salt
  • 1 clove garlic, crushed or minced
  • 1/4 cup dressing quality olive oil
  • peanut oil for frying, if desired
  • *if lemongrass is unavailable, you can use green onion tops and a touch of lemon juice to replace part of the vinegar
