Warm Bacon And Silverbeet Salad

- 1 bunch silver beet or a bag of spinach. (About 400g) shopping list
- 4-6 slices bacon (about 100g) shopping list
- 2 free-range eggs shopping list
- Vinegarette: shopping list
- 1tsp sugar shopping list
- 1tsp mustard shopping list
- couple of grinds pepper shopping list
- 1tbsp olive oil (or equivalent) shopping list
- 3tbsp balsamic vinegar (or equivalent) shopping list
How to make it
- Cook the bacon to make it crispy. (I lie mine on a plate and cover with a lid and microwave for 4 mins).
- Meanwhile boil a cup of water in the kettle.
- Finely chop the silver beet/ spinach and, microwave in a covered large glass bowl with 1/2 cup of boiled water for 1 min.
- While that's cooking, chop the bacon finely.
- Crack 2 eggs into seperate microwaveable bowl and mix to break up the yolk. Cover and microwave for 1.5 mins.
- Drain the silverbeet and add the chopped bacon and chopped cooked egg.
- To make the vinegarette add all the listed ingredients into a jar with a lid, and shake. Pour over the salad just before serving. Enjoy!
