Moroccan Fish Fillets With Fruit Couscous

- 1-2 cloves garlic, crushed shopping list
- 1cm (5g) piece of fresh ginger, grated shopping list
- 1 tspn ground cumin shopping list
- 1/2 tsp ground turmeric shopping list
- 1/2 tsp hot paprika shopping list
- 1/2 tsp ground coriander shopping list
- 4 @ 200g blue-eye fillets, skinned shopping list
- 1 tbsp olive oil or spray shopping list
- yoghurt and coarsely chopped coriander to serve shopping list
- Fruity Couscous: shopping list
- 2 cups (200g) couscous shopping list
- 2 coups (500ml) boiling water shopping list
- 1 large pear (330g) finely chopped shopping list
- 1/2 cup (75g) finely chopped dried apricots shopping list
- 1/2 cup (95g) coarsely chopped dried figs shopping list
- 1/2 cup coasley chopped fresh flat leafed pasley shopping list
- 1/4 cup (40g) toasted pine nuts shopping list
How to make it
- Combine garlic, ginger and spices in a large bowl
- Add fish- toss carefully to coat
- Heat oil in large non-stick frying pan- cook fish in batches until browned both sides and cooked as desired
- Couscous: combine couscous, water and butter in large bowl. Cover and stand about 5 mins or until water is absorbed, fluffing with fork occassionally. Stir in remaining ingredients.
- Divide couscous among plates, top with fish. Seve with combined yoghurt and coriander
