P-P-P-Pineapple Raisin Cookies

- 1 cup firmly packed brown sugar shopping list
- 1/2 cup soft butter shopping list
- 1 egg shopping list
- 1 t. vanilla or rum extract shopping list
- 1/2 cup raisins shopping list
- 3/4 cup canned, crushed pineapple, undrained shopping list
- 2 cups flour shopping list
- 1 t. baking powder shopping list
- 1/2 t. baking soda shopping list
- 1/2 t. salt shopping list
- 1/2 cup chopped walnuts or pecans shopping list
How to make it
- Combine brown sugar, butter, egg, and your choice of extract in mixing bowl.
- Beat until fluffy.
- Add raisins, and pineapple; mix thoroughly.
- Combine flour, baking powder, baking soda, and salt; add to the creamed mixture and mix well.
- Stir in nuts.
- Drop by spoonfuls 2 inches apart on greased cookie sheets.
- Bake at 375 for 12 to 15 minutes.
- Makes about 4 dozen cookies.
- May dust with powdered sugar while still warm if desired.
