White Chocolate Lime Cheesecake

- 1/3 cup butter, softened shopping list
- 1/3 cup sugar shopping list
- 1 cup all-purpose flour shopping list
- FILLING: shopping list
- 4 packages (8 ounces each) cream cheese, softened shopping list
- 1 cup sugar shopping list
- 1 teaspoon vanilla extract shopping list
- 4 eggs, lightly beaten shopping list
- 1/4 cup lime juice shopping list
- 1 package (10 to 12 ounces) vanilla or white chips, melted and cooled shopping list
How to make it
- Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan; set aside.
- In a small mixing bowl, cream butter and sugar until light and fluffy. Gradually add flour; mix well. Press onto the bottom of prepared pan. Place on a baking sheet. Bake at 350° for 12 minutes or until set. Cool on a wire rack.
- In a large mixing bowl, beat the cream cheese, sugar and vanilla until well blended. Add eggs; beat on low speed just until combined. Transfer half of the mixture to another bowl; stir in lime juice. Stir melted chips into remaining cream cheese mixture; pour over crust. Top with lime filling.
- Place springform pan in a large baking pan; add 1 in. of hot water to larger pan. Bake at 350° for 45-50 minutes or until center is just set and top appears dull.
- Remove pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan before slicing.

Very easy to make. Everyone loved it. As I don´t like a cheesecake to be too sweet, I reduced the amount of white chocolate by a third. Even then a bit sweeter that I would like, but everyone else thought it was great.
