Vegetable Yogurt Pie

- 2 pie crusts (check my recipe collection) shopping list
- 1 medium size zucchini, chopped shopping list
- 1/2 onion, chopped shopping list
- 4 - 5 cloves of garlic shopping list
- 1/2 - 3/4 can of corn shopping list
- 5 Tbs yogurt shopping list
- 1 egg shopping list
- 2 Tbs olive oil shopping list
- 2 Tbs chopped dill shopping list
- 2 tsp crushed red pepper shopping list
- 1 cup cooked vegetarian sausage (optional) shopping list
How to make it
- Have one pie crust ready on pie plate.
- Add the zucchini, onion, garlic and corn (or whichever vegetables you chose.) If you choose to add vegetarian sausage, this is a good time to add it as well.
- In another bowl, mix the yogurt, oil, egg and the spices.
- Pour the egg + yogurt mix over the vegetables.
- Top with additional pie crust and pressed sides to seal.
- Make three slashes gently on top.
- Bake in the 350F oven until it is brown, for about 30 - 40 mins.
- Allow to cool slightly before cutting!
- Enjoy, it is simply delicious!

Mmmm... yummy! Sounds great. I'd probably throw in a bit of cheese too. (i put cheese in almost everything... LOL) Can't wait to try this. :)
