Squash Pear and Onion au Gratin

- Gratin: shopping list
- 1 1/2 lbs. butternut, buttercup, or banana squash shopping list
- 1 large onion, sliced and separated into rings shopping list
- 1 TBSP. butter shopping list
- 1 medium pear, peeled and thinly sliced shopping list
- couple pinches of salt shopping list
- Topping: shopping list
- 3 TBSP. fine, dry breadcrumbs shopping list
- 3 slices bacon, crisp-cooked, drained, and crumbled shopping list
- 2 TBSP. chopped walnuts shopping list
- 1 TBSP. grated romano cheese shopping list
- 1 TBSP. melted butter shopping list
- 2 TBSP. snipped fresh parsley, optional shopping list
How to make it
- Preheat oven to 350 degrees F.
- Peel squash; slice crosswise into 1/2 inch slices (If using butternut squash, first cut the squash in half lengthwise.) Remove and discard seeds. Set squash aside.
- Cook onion rings in the 1 TBSP. butter over medium heat for 5 - 10 min. or until tender.
- Arrange half of the squash slices in the bottom of an 8" x 8" x 2" baking dish. Top with half of the pear slices. Repeat layers. Sprinkle lightly with salt. Cover with the cooked onions. Bake, covered, for about 45 min. or until nearly tender.
- Meanwhile, in a small bowl combine bread crumbs, bacon, walnuts, Romano cheese, and the 1 TBSP. melted butter; sprinkle over vegetables. Bake, uncovered, about 15 min. more or until tender. If desired, sprinkle with parsley.

This recipe is for those that don't like squash. I served it last night for dinner and it was a success. I used summer squash and it turned out delicious.
