Vegetable Stacks With Tomato Coulis

- tomatoes-Make a coulis (pureed tomatoes;cooked slightly to remove some moisture shopping list
- onions shopping list
- zucchini shopping list
- summer squash shopping list
- peppers any color shopping list
- olive oil shopping list
- sea salt shopping list
- Fresh Grated pepper shopping list
- herbs of your choice shopping list
- balsamic vinegar shopping list
- Sprouts shopping list

How to make it
- Slice the vegetables to approx. size of the food ring
- Toss them in olive oil
- Spread out on a sheet pan
- Salt and Pepper and add any spices you like
- Bake the vegetables in a 400* oven until the vegetables become pliable
- Layer the vegetable is the rings
- Place on a sheet pan and bake until tender about 5-8 minutes
- Place tomato sauce on a serving plate and unmold the vegetable stacks
- If you can't find the vegetable molds you can insert a skewer through the center to keep the shape.
- Sprinkle with balsamic vinegar
- Top with sprouts and/or your favorite grated cheese
- Var. In between the layers I add Feta and oil-cured Greek olives and egg plant and pour a cucumber sour cream sauce over the top.
