Impossible Ratatouille Pie

Got this from a friend who says she got it off a Bisquick box long ago.
Ingredients
- olive oil shopping list
- 1 cup zucchini, chopped shopping list
- 1 cup eggplant, chopped shopping list
- 1/2 cup tomato, chopped shopping list
- 1/2 cup green pepper, chopped shopping list
- 1/2 cup onion, chopped' shopping list
- 1 clove garlic, finely chopped shopping list
- 1/2 tsp. thyme shopping list
- 1/2 tsp. basil shopping list
- 1 cup mozzarella cheese, grated shopping list
- 1 1/4 cup milk shopping list
- 1/4 cup sour cream shopping list
- 3/4 cup Bisquick shopping list
- 3 eggs shopping list
How to make it
- Preheat oven to 400
- Heat oil in saute pan
- Add next 7 ingredients and saute until slightly tender
- Mix milk, sour cream, Bisquick, and eggs until blended
- Put sauteed veggies into 9 in. pie plate
- Sprinkle cheese over top of veggies
- Pour Bisquick mixture into pie plate
- Bake for 30 minutes
