Spinach Patties

- 1 bag of fresh spinach shopping list
- 1 small onion grated shopping list
- 1 garlic clove minced shopping list
- 1 large egg or 2 small shopping list
- Buttery cracker crumbs, or cornmeal or matzoh meal shopping list
- seasoned salt to taste shopping list
- fresh chopped herbs optional such as basil, parsley etc. shopping list
- Optional variation: some raisins, plumped in wine and drained shopping list
- oil to fry shopping list
How to make it
- Wash spinach, drain and coarse chop
- Mocrowave 3 to 5 minutes to wilt
- Drain in colander and press out any excess liquid.
- Place in bowl and add onion, seasoning, egg, ands enough crumbs to bind mixture.
- Shape into patties, you should get 5 or 6
- Fry in some oil ( I used Basil Oil ) over medium high heat, golden on each side
- drain on toweling paper.
- Serve at once
- Note: each type of crumb gives a different taste and texture.
- Addition of raisins also give a unique delicious flavor
