Gingerbread Crepes With Maple Cream

- The crepes: shopping list
- 1 cup all-purpose flour shopping list
- 1 cup 2% milk shopping list
- 3 tbsp packed, dark brown sugar shopping list
- 1/2 tsp ground cinnamon shopping list
- 1/4 tsp ground nutmeg shopping list
- 1/4 tsp ground ginger shopping list
- 1/8 tsp ground cloves shopping list
- 1/8 tsp ground allspice shopping list
- dash sea salt shopping list
- 3 tbsp butter, melted shopping list
- 2 large eggs shopping list
- 1/2 cup club soda shopping list
- ---------------------------------------------- shopping list
- the cinnamon/orange maple syrup: shopping list
- 2 cups pure maple syrup shopping list
- 3 strips orange peel shopping list
- 2 cinnamon sticks shopping list
- ---------------------------------------------- shopping list
- the maple cream: shopping list
- 1 cup mascarpone cheese at nearly room temperature shopping list
- 1/2 cup whipping cream shopping list
- 1/3 cup cinnamon/orange maple syrup shopping list
- ground cinnamon for garnish shopping list
How to make it
- For crepes:
- whisk all ingredients except the club soda
- whisk until smooth and evenly blended
- stir in the club soda
- lightly grease and heat an eight inch crepe pan or other nonstick pan over medium heat
- [ you may need to adjust the heat after the first few crepes]
- spoon about 2 tbsp crepe mixture into the pan, and swirl to completely coat the surface of the pan
- cook for about 2 minutes, or until the top of the crepe loses its shine
- flip over with a spatula, or be daring and toss it in the air to turn!
- cook about 30 seconds more
- slide the crepe onto a parchment paper lined baking sheet, and continue repeating this cooking process until all the batter is gone
- NOTE:
- if preparing in advance, do not store the crepes in the refrigerator. Either leave them at room temperature, or quickly freeze. Refrigerating will only dry them out.

- the cinnamon/orange maple syrup:
- heat the maple syrup over low heat with orange peel and cinnamon sticks
- cook for about 10 minutes
- remove from heat and cool
- chill with orange peel and cinnamon
- the flavors will continue to infuse until ready to use

- the maple cream:
- beat Mascarpone cheese on low speed to soften
- pour in the whipping cream, beating faster
- whip until a medium peak forms
- stir in the cinnamon/orange maple and chill until ready to serve
- ----------------------------------------------
- to serve:
- heat the syrup in a large pan
- fold crepes into quarters and place them into the warming syrup
- let the syrup start to bubble
- turn crepes to coat both sides
- warm through thoroughly
- place 2 crepes on each plate
- spoon a generous tbsp of the maple cream on top
- garnish with powdered cinnamon
