Bacon Wrapped Lamb Chops With Garden Fresh Veggies

- 6 to 8 small lamb chop ends shopping list
- bacon shopping list
- 1 garlic clove shopping list
- fresh beans, yellow and green beans shopping list
- fresh carrots shopping list
- brown rice shopping list
- 4 green onions shopping list
- 3 tbsp soya sauce shopping list
- balsamic vinegar shopping list
- 1 lemon shopping list
- 2 tsp sugar shopping list
How to make it
- In a skillet, add 2 tbsp olive or canola oil
- Wrap a slice of bacon around each chop, securing with toothpick
- Place French-cut sliced green onions into the skillet, and allow to caramelize. Remove onions and set aside
- Add garlic, finely chopped
- French-cut the beans
- Add the chops, and then add the carrots and beans. Cook over low to medium heat until the chops are done and the bacon is crisp
- In the meantime, cook one cup of brown rice, with the soya sauce in the water, and drain…
- Make a balsamic vinegar reduction:
- In a small saucepan, combine:
- 5 tbsp balsamic vinegar
- Juice of one whole lemon
- Reduce this to ½ the original quantity.
- Take some of the zest of the lemon and reserve.
- When ready to serve, plate as follows:
- Place a bed of rice on the plate first;
- Add the chops on top;
- Drizzle with the balsamic reduction;
- Sprinkle lemon zest on top of chops;
- Add the vegetables around the meat and rice;
- Drizzle a little of the balsamic reduction around the plate.
