Tequila Lime Chicken Tacos With Cumin Lime Vinaigrette

- cumin-LIME VINAIGRETTE: shopping list
- 3 tablespoons white wine vinegar or cider vinegar shopping list
- 2 tablespoons fresh lime juice shopping list
- 1 tablespoon minced parsley or fresh cilantro shopping list
- 1/2 teaspoon ground cumin shopping list
- 1 teaspoon sugar shopping list
- 1/2 cup olive oil shopping list
- chicken TACOS: shopping list
- 3 boneless, skinless chicken breast, julienned shopping list
- 2 T butter shopping list
- 2 T olive oil shopping list
- 1/2 onion, chopped fine shopping list
- 1 package taco seasoning shopping list
- 1 t cumin shopping list
- 1 T chopped garlic shopping list
- 1/4 c chicken stock (in place of water, use amount as directed on seasoning packet shopping list
- 1 small can green chiles, drained shopping list
- juice and zest of 1/2 lime shopping list
- 1 T tequila shopping list
- Toppings: shopping list
- Shredded lettuce shopping list
- chopped tomatoes shopping list
- sliced black olives shopping list
- sliced jalepenos - optional shopping list
- Shredded cheese shopping list
- sour cream shopping list
- Hard or soft taco shells shopping list
How to make it
- Cumin Lime Vinaigrette:
- Whisk all ingredients together until well blended.
- Refrigerate dressing.
- Chicken Tacos:
- Melt butter with olive oil in nonstick skillet
- Add remaining taco ingredients
- Cook about 8-12 minutes, until chicken is cooked through and liquid reduces
- Put it Together:
- Heat hard shells in oven, or soft shells in damp paper towels in microwave
- Stir together dressing, lettuce, tomatoes and olives - Use dressing a little at a time here, will have some left (and jalepenos)
- Place filling in taco shells, top with salad, cheese and sourcream
