Clam Slumgullion

- 6 slices bacon shopping list
- 1/2 to 1 c. coarsely chopped onion shopping list
- 2 c. clam broth shopping list
- 3 medium potatoes, peeled and diced (3 c.) shopping list
- dash of Tabasco shopping list
- 1 t. coarsely ground black pepper shopping list
- 3 c. milk shopping list
- 1 c. evaporated milk or heavy cream shopping list
- 1 1/2 c. clams, chopped (fresh is better) shopping list
- 2 c. small cooked shrimp shopping list
- salt to taste shopping list
How to make it
- fry bacon over medium heat til crisp
- drain on paper towel, cool, break into bite-size pieces
- pour off all but 2 tablespoons of the bacon fat
- saute the onion in the reserved bacon fat
- stir in clam broth
- add potatoes
- bring to low rolling boil and cook til potatoes are fork-tender, about 10 minutes
- add Tabasco sauce and pepper
- heat milk and evaporated milk (or cream), add to potatoes along with clams
- when clams are warm (in a few minutes) stir in shrimp and bacon
- salt to taste
- OPTIONAL: reserve some of the bacon for garnish
