Italian Cod

- 2 Tbl butter shopping list
- 1/8 C fresh whole wheat bread crumbs shopping list
- 1 heaping Tbl chopped walnuts shopping list
- Grated rind and juice of 2 lemons shopping list
- 2 fresh rosemary sprigs, stalks removed shopping list
- 2 Tbl chopped fresh parsley shopping list
- 4 cod fillets, about 5 1/2 to 6 oz. each shopping list
- 1 garlic clove, crushed shopping list
- 1 small fresh red chili, diced shopping list
- 3 Tbl olive oil shopping list
How to make it
- Preheat oven to 400
- Melt the butter in a large pan over low heat, stirring constantly
- Remove pan from heat and stir in bread crums, walnuts, the rind and juice of 1 lemon, half the rosemary and half the parsley, stirring until mixed
- Press the crumb mixture equally on the cod fillets
- Place the fillets in a shallow, sprayed baking dish
- Bake for 20-25 minutesor until fish flakes with a fork
- Mix the garlic, remaining rind and juice, rosemary, parsley and the chili together in a bowl
- Beat in the oil and mix to combine
- Drizzle over cod as soon as it is cooked
- Transfer to warm serving plates and serve at once with the greens
