diabetic fruit cake

- Serves 8
taste as a normal fruit cake family and friends who are not diabetic love it
Ingredients
- 2cups dried fruit shopping list
- 1 cup sugar free juice(own choice) shopping list
- ive used all flavours shopping list
- 1 cup mashed banana shopping list
- 1,1/2 cups s r flour shopping list
- 1/2teaspoon bi-carb soda shopping list
- 1 teaspoon mixed spice shopping list
How to make it
- boil fruit and juice together for 3mins
- allow to cool
- add rest of ingredients and mix well
- line 2lb loaf tin,
- pour in mixture
- cook in oven,,
- temp 170c
- approx 55min
- absolutly delicious

Thank you for this recipe my husband loves cake also but was very resticted because of diabetes.
Now he can't get enough of this cake.
