Pan Fried Fish w lemon-butter-caper sauce

- 1 lb fish fillets preferable Filet of sole or flounder...the picture shows tilapia filets shopping list
- salt and pepper shopping list
- 3 - 4 tablespoons olive oil shopping list
- 4 tbs butter(real butter not margarine....although I haven't tried it with margarine) shopping list
- 1 tbs capers shopping list
- juice of 1 lemon(I used bottled lime juice instead) shopping list
- 1 tsp parsley shopping list
How to make it
- season fish with salt and pepper
- heat oil in non stick pan over medium heat
- add fish and cook on one side until brown
- flip over once and brown on other side
- meanwhile heat only 1 tbs of butter in small saucepan
- add lemon juice parsley and capers
- simmer then remove from heat!!!!!!!
- ****I learned this tip from a youtube video*****
- add remaining butter and swirl around until it is melted
- ****this will create a creamy buttery sauce not oily***
- serve fish with butter sauce drizzled over

What a great recipe! Simple and fast for everyday and yet I would gladly serve it to guests as well. Have you ever tried Basa fillets? It is a relative of the catfish and is my current favourite I think that it would be good for this recipe too.
