Cinnamon Sourdough Crumpets

Adapted from Baking Bites. Crumpets are best served toasted and spread with butter, honey or jam for breakfast. They also make a healthy sandwich and are always able to be at hand since they freeze so easily! This is also a great way to avoid sourdough starter waste when you don't want a loaf of bread.
Ingredients
- 1 cup (unfed) sourdough starter shopping list
- 1 tsp sugar shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp cinnamon shopping list
How to make it
- Mix all ingredients together in a medium bowl.
- Heat a dry nonstick skillet over medium heat.
- Drop dollops of batter in, and cook until tops are set.
- Serve immediately or cool and freeze in plastic bags.
