Sicilian Zeppole with Ricotta

- 1 1/4 lb. Presto flour shopping list
- 1 1/2 lb. Ricotta shopping list
- 4 eggs shopping list
- 1/2 cup sugar shopping list
- 1 tsp. vanilla extract shopping list
- cinnamon and sugar mixture (enough to coat after frying) shopping list
- small pot filled 1/2 way with vegetable oil shopping list
How to make it
- Beat 4 eggs
- Add the ricotta
- Add the sugar and vanilla extract. Mix well.
- Add the flour and mix well. In case batter is a little stiff add a small amount of milk and mix well.
- Gently place batter in hot oil using tip of a metal spoon or ice cream scooper.
- Roll freshly fried zeppole in cinnamon and sugar mixture.
