Congaree Campfire Stew

- 1 Pound lean ground beef shopping list
- 2 Cans Campbell's vegetable soup (vegetarian or Vegetable beef) shopping list
- 1 green bell pepper, chopped shopping list
- 1 Medium onion, chopped shopping list
- 1 Stalk celery, chopped shopping list
How to make it
- Brown beef, pepper, celery and onion in a heavy skillet, drain excess fat.
- Mix in the soup (undiluted) I like to add a little extra tomato--usually some tomato sauce or v-8 juice.
- Add any other seasonings, such as garlic or garlic powder or vegetables, such as carrots , extra potatoes or even diced tomatoes. It is fine without extras though.
- Cook until all vegetables are tender and serve on a plate or in a bowl.
- Very tasty!

Oh I remember this! It must have gone national, because we had it here in Michigan too, only we called it "Hobo Stew". We'd add baked beans to the mix. Thanks for the reminder, my boys will love it. My daugher, she'll just eat salad!
