Warm Danish Potato Salad

- 1 1/2 lbs. new potatoes (small is nice) shopping list
- 4 slices bacon, chopped shopping list
- 1 small onion, finely chopped shopping list
- 1 tbsp. flour shopping list
- 1 cup water shopping list
- 3 tbsp. lemon juice shopping list
- 1 tbsp. Dijon mustard shopping list
- 1 tbsp. worcestershire sauce shopping list
- 1 tbsp. liquid honey shopping list
- 1/4 tsp. celery salt shopping list
How to make it
- Wash potatoes but do not peel. Put them in a pot with cold salted water and bring to a boil. Reduce heat and simmer for 10 to 15 minutes until just tender. Drain well. Transfer to a heated serving dish and keep warm.
- Meanwhile fry bacon in its own fat over high heat until crisp. Remove from pan with slotted spoon and drain on paper towel. Add onion to fat remaining in pan and fry gently for 2 minutes. Blend in flour and cook for 1 minute. Whisk in water until mixture is smooth then stir in remaining ingredients. Bring to a boil, reduce heat and simmer; stirring all the time, until thickened. Add bacon to potatoes, pour on hot dressing and serve at once.
