Irish Pancakes

- 1 cup plain flour shopping list
- pinch of salt shopping list
- 2 eggs shopping list
- 1 cup milk shopping list
- 1 tbsp melted butter shopping list
How to make it
- Put all the ingredients in a blender (wet ingredients first)and blend for about 30 seconds.
- Let the batter stand for about 30 minutes (enough time to make bacon, or cut fruit).
- Pre-heat your pan or griddle to medium heat.
- Grease the pan with a little butter or shortning.
- Pour about two tablespoons or so out onto the griddle, carefully tilt the griddle to thin these out, and cook them.
- If they are thin enough, they can go without flipping, especially if you serve them rolled up.
- Stuff them with fruit, bacon and eggs, btter, whatever you like. Spinkle with powdered sugar, maybe drizzle a little syrup on them...Go nuts!
