MASS COOKING -BIRYANI FOR 100 PEOPLE

- 30 grams cardamom seeds shopping list
- 25 kilograms of chicken / mutton shopping list
- 7 kilograms rice shopping list
- 750 grams of ginger{ a bit more if mutton is used} shopping list
- 250 grams garlic { a bit more if chicken is used} shopping list
- 2 kk ghee shopping list
- 4x 750 ml oil shopping list
- 5 kgs masoor{ brown lentils} shopping list
- 50 g whole cinnamon shopping list
- 3 tsp fine cinnamon shopping list
- 2 kgs tomatoes {pureed} shopping list
- 3 kgs onions shopping list
- 1 tablespoon saffron srands shopping list
- 125 g whole green chillies / to taste shopping list
- 125 g red chilli powder shopping list
- 125 g red crushed chillies {fresh / dried} shopping list
- 28 g turmeric shopping list
- 56 g shah jeera {cumin} shopping list
- 14 g cumin powder shopping list
- 4 x 500ml plain yogurt {for mutton use 6x 500ml} shopping list
- 2 cups lemon juice shopping list
- +- 600g salt shopping list
- 4 kg potatoes shopping list
How to make it
- fry the grated onions in oil
- fry the potatoes in oil
- marinate meat with spices and fried onions{save some fried onions to place on top of rice } for several hours? overnight
- at the bottom of a couldron {large pot for mass cooking ,put oil
- then the marinated meat ,boiled brown lentils.then the fried potatoes
- finally top with the rice and the left over fried onions ,with the blobs of the ghee
- seal the pots with a double layer of foil
