Coffee Toffee Mud Pie

- Toffee shopping list
- 2 sticks butter, unsalted shopping list
- 1 cup sugar shopping list
- 2 tbls. water shopping list
- 2 tsp. lemon juice, fresh shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. almond extract shopping list
- 1/4 tsp. vanilla extract shopping list
- 2 1/2 cups chopped walnuts, toasted shopping list
- 4 oz. bittersweet chocolate, finely chopped shopping list
- Crust shopping list
- 15 Oreo cookies shopping list
- 3 tbls butter, melted and unsalted shopping list
- Filling shopping list
- 1 pint coffee ice cream, softened shopping list
- 1 pint chocolate ice cream, softened shopping list
- whipped cream to garnish shopping list
How to make it
- Cook time does not include freeze time
- Toffee
- Line cookie sheet with buttered foil
- Combine 1st 7 ingredients in large saucepan
- Stir over low heat until sugar dissolves
- Put heat to medium and cook until candy thermometer hits 300, stirring and brushing down sides of pan with pastry brush dipped in water for about 20 minutes
- Mix in nuts
- Pour onto buttered cookie sheet
- Let cool fro 2 minutes or so
- Sprinkle chocolate over
- When melted, spread over toffee using back of spoon
- Freeze about an hour
- Chop into little pieces
- Crust
- Preheat oven to 350
- Put ingredients into food processor and grind until combined
- Press crumb mixture into bottom only of 9 inch spring form pan with 2 3/4 inch sides
- Bake 10 minutes
- Cool
- Filling
- Mix half of toffee mixture into coffee ice cream
- Spoon mixture into crust
- Freeze 2 hours
- Mix other half of toffee mixture into chocolate ice cream
- Spoon over coffee ice cream and smooth over top
- Cover with plastic wrap and freeze overnight
- Release pan from sides and garnish with whipped cream
