Chicken Breasts with Shallots In A Creamy Raspberry Sauce

- 6 boneless skinless chicken breasts shopping list
- 1/4c. butter shopping list
- 1T. oil shopping list
- 1/4c. finely chopped shallots shopping list
- 3/4c. raspberry vinegar (I use raspberry balsamic) shopping list
- 11/4c. good chicken stock shopping list
- 11/4c. whipping cream shopping list
- 3/4t.salt shopping list
- 1c. fresh raspberries ( if I can't find fresh berries I have been known to substitute 1/2c, of raspberry all fruit spread and it works great) shopping list
How to make it
- Heat butter and oil in skillet
- Saute shallots till translucent
- Salt both sides of chicken
- Add chicken and fry till golden on both sides
- Remove chicken from skillet and set aside
- Deglaze the skillet with the 3/4c. of vinegar
- Return chicken to pan and simmer til chicken is done
- Remove chicken from skillet again
- Bring liquid in skillet to a boil and reduce till it has the consistency of light cream
- Add whipping cream and reduce again till sauce coats the spoon
- Add chiken back to pan abd heat through
- Add fresh raspberries
- Garnish with fresh mint leaves
- Serve
- This is really good served with roasted fresh veggies and a side of buttered pasta
