Trailer Park Cheesecake

Great for bowlin' nite! Another one from RubyAnn Boxcar's Trailer Park cookbook.
Ingredients
- 1 package lemon JELL-O shopping list
- 1 cup boilin' water shopping list
- 3 tablespoons lemon juice shopping list
- 8 oz. cream cheese shopping list
- 1 cup sugar shopping list
- 1 teaspoon vanilla shopping list
- 1 can sweetened condensed milk, whipped shopping list
- 1 lb. graham crackers shopping list
- 1/2 cup margarine shopping list
How to make it
- Dissolve JELL-O in boilin' water, and add lemon juice. Let it cool,
- Cream together cheese, sugar and vanilla. Add JELL-O mixture, and mix well. Fold whipped milk into mixture
- Crush graham crackers into very fine crumbs and add melted margarine. Firmly pack 2/3 of the crumbs into a 9 x 13 x 2 inch pan, coverin' both bottom & sides.
- Add fillin' and sprinkle remainin' graham crackers on top.
- Chill for several hours.
- Cut into squares and serve.
- Some of your favorite toppin' - like some cherries or blueberries would be good!!
