Carrot Cake

- 4 eggs shopping list
- 2 cups sugar (500 ml) shopping list
- 1 teaspoon baking soda (5 ml) shopping list
- 3 cups grated carrots (750 ml) shopping list
- 1 cup oil (250 ml) shopping list
- 2 1/2 cup self raising flour (625 ml) shopping list
- 1 teaspoon finely grounded cinnamon (5 ml) shopping list
- 1/4 teaspoon salt (1 ml) shopping list
- 1/4 cup golden syrup (62,5 ml) shopping list
- icing shopping list

- 3/4 cup butter (100 ml) shopping list
- 3 cups sifted icing sugar (750 ml) shopping list
- 3/4 cup smooth cottage cheese (200 ml) shopping list
- 1/2 teaspoon vanilla essence (2,5 ml) shopping list
- 1/2 cup chopped nuts (125 ml ) - optional shopping list
How to make it
- CAKE

- Beat eggs and sugar until creamy.
- Beat in the oil.
- Mix well.
- Sift flour, baking soda, cinnamon and salt together.
- Fold dry ingredients gradually into wet mixture.
- Stir in the grated carrots lightly.
- Stir in the syrup.
- Pour into the shape pan that you'll like.
- Bake for 40 minutes at 360 deg F (180 deg C)
- ICING
- =====
- Mix butter and icing sugar very well.
- Stir in the cheese.
- Stir in the vanilla.
- Place in freezer to cool down and set a bit.
- Pour over cooled down cake.
- Sprinkle nuts over.
