Sweet Cheese Patties

- 1 lbs dry curd (farmer) cheese - Friendship farmer cheese is the best, but California style cottage cheese will work as well shopping list
- 2 eggs shopping list
- 1/2 cup sugar shopping list
- 1/4 tsp salt shopping list
- 1/2 tsp ground cinnamon shopping list
- lemon zest of 1/2 lemon shopping list
- 1/3 cup raisins, dried cherries or cranberries shopping list
- all purpose flour shopping list
- cooking oil shopping list
How to make it
- Mash cheese with the wooden spoon
- Stir in eggs sugar and salt and mix well, until egg is evenly distributed
- Add cinnamon, raisins, lemon zest and stir some more
- Start adding flour in small batches and stir, until thick dough forms
- -
- Fold the dough out on a board and roll it into a ball
- With your bare hands, tear off pieces of dough the size of a nectarine or large plum, form balls, drench them in flour.
- Press each ball down on the board, using your three middle fingers - to about 1/2 thick "patty"
- Heat 4-5 tbsp cooking oil in a skillet
- Fry cheese patties on both sides over medium heat, until pleasantly browned and not too dark
- Remove from oil with slotted spoon and place on paper towel to drain excess fat.
- Serve with sour cream on the side

- GRANDPA'S VARIATION: Skip the sugar and dried fruit. Add more salt.
