Pasta Arrabiata With Black Olives And Crispy Bacon

- 2 x cans chopped good quality tomatoes shopping list
- 1 teasp sugar shopping list
- 1/1.5 heaped tblsp tom puree shopping list
- 1 large onion diced finely shopping list
- 3 cloves of garlic diced finely shopping list
- 2 tblsp olive oil shopping list
- Half large glass of red wine shopping list
- tblsp of chopped dried or fresh oregano shopping list
- tblsp of chopped dried or fresh basil shopping list
- 1 or 2 tblsp of balsamic vinegar shopping list
- handful of black olives pitted and halved shopping list
- 3/4 slices of crispy bacon, just fried and chopped shopping list
- Freshly grated parmigiana shopping list
- salt and pepper to taste shopping list
- pasta of your liking-better with spaghetti maybe:) shopping list
How to make it
- Saute the onion/garlic and oregano in a hot pan with the olive oil till translucent /browning
- Keeping the heat high, throw in the red wine and reduce for a few mins
- Add the tomatoes, puree and sugar, balsamic vinegar and turn down the heat-stir
- Prepare your crispy bacon and pitted and rinsed olives and add
- Do not let the tomatoes stew as this will make it watery -turn off the heat when hot enough to serve.
- Salt and pepper to taste. Do not oversalt -remember the bacon!!!!- taste all the time.
- Add basil just before serving and add sauce to your pasta with some freshly cracked black pepper and freshly grated parmigiana.
