Baked Drunken Chicken With Raisins

- 8 boneless, skinless chicken breast halves shopping list
- salt and fresh ground pepper to taste shopping list
- 1 cup flour shopping list
- 2 TBLS. olive oil shopping list
- 2 TBLS. butter shopping list
- 1 large onion, finely chopped shopping list
- 2 TBLS. minced fresh parsley shopping list
- 1 15 oz. can chopped or diced tomatos shopping list
- 1/2 tsp. ground cinnamon shopping list
- 1/4 tsp. ground cloves shopping list
- 1/4 packed light brown sugar shopping list
- 1 cup Sherry or vermouth (never have used the vermouth) shopping list
- 1/2 cup golden raisins shopping list
How to make it
- Season chicken with salt and pepper and dredge with flour.
- Heat oil and butter in a large skillet and brown chicken.
- Place browned chicken in shallow 3 quart casserole or similiar baking dish.
- In the same pan that you cooked the chicken, cook the onions until transparent.
- Add parsley, tomatoes with liquid, cinnamon, cloves, brown sugar, sherry and raisins.
- Simmer uncovered for 15 minutes stirring occasionally.
- Pour sauce over chicken and bake at 375 for 30 minutes.
